Number of Servings: 4

Ingredients

    Zucchini, 2 large, sliced into 1/4 inch discs
    Bread crumbs, 0.25 cup
    Parmesan Cheese, grated, 0.25 cup
    egg white, 2 large (or 0.5 C egg substitute)
    Salt, 0.25 tsp
    Garlic powder, 1 tsp
    Garlic powder, 0.25 tsp
    Pepper, black, 0.2 tsp

Directions

-Preheat oven to 350 degrees
-Put egg whites into a bowl
-In a separate bowl, combine the dry ingredients
-Coat zucchini discs in egg white, then dry ingredients and arrange on baking sheet
-Bake 8 minutes on each side, or until golden brown
-Serve and enjoy!
