Ingredients

    4 c. shredded c arrots
    1 c. shredded apple
    3 c. flour
    2 c. sugar
    0.66 c. brown sugar
    4 eggs
    1/2 c. oil
    1/2 c. milk
    2 tsp vanilla
    3 tsp cinnamon
    2.5 tsp baking soda
    1 tsp salt
    1 tsp nutmeg
    1/2 tsp ginger

Directions

Mix wet ingredients and sugars. Add dry ingredients. Stir in carrots and apple until blended. Bake in mini pan 12 min, reg cupcake pan 20 min at 350.
