Ingredients

    1 - 10oz can Campbell's Cream of Mushroom soup
    1lb lean ground beef
    1 & 2/3 cups frozen mixed vegetables
    ~4 cups of mashed potatoes
    ground black pepper
    garlic salt

Directions

-Pre-heat oven to 350 degrees
-Make mashed potatoes, either instant mashed potatoes or fresh. You can also use store bought mashed potatoes or leftover mashed potatoes. I recommend using leftover mashed potatoes.
-In a small frying pan, season ground beef to tastes with ground black pepper and garlic salt.
-Over medium heat brown ground beef until cooked through. Drain.
-In a 9 in pie plate, combine drained ground beef, frozen mixed vegetables, and cream of mushroom. Mix until vegetables and ground beef are coated. Spread mixture evenly in the pie plate.
-Spread the mashed potatoes evenly over the top of the mixuture in the pie plate.
-Place pie in the oven. Bake at 350 degrees for 30 minutes or until the mashed potatoes are slightly browned and the soup is bubbling out of the pie plate.
-Remove from oven and let cool for about 5 minutes.
-Serve and enjoy.
-Makes 6 servings and 1 serving equals 1/6 of the pie.

    This is one of my feel good meal! I had onion to the beef and I spread cheese (low fat moz or cheddar) on it... We eat smaller portions (I serve 8) and it makes an excellent leftover... Thanks for sharing :-) - 9/12/10
