A fabulous local restaurant makes something very similar as a sub, and since they're so simple, I make them at home all the time, only as a low-cal sandwich! Ingredients

4 slices diet bread (45-50 calories each)
1 8-oz package sliced mushrooms
4 tsp yellow mustard
2 tbsp whipped dressing (such as Miracle Whip)
2 oz sliced Swiss cheese
Salt and pepper to taste
Directions
Clean mushrooms if needed. Heat a frying pan over medium heat until hot, and add a little water. Add the mushrooms and sprinkle on salt and pepper. Add one or two tbsp of water as needed to keep mushrooms from sticking. Continue frying, stirring occasionally, until mushrooms are tender, about 10 to 15 minutes.
Lay out two pieces of bread on two plates. Spread 2 tsp of mustard and 1 tbsp of whipped dressing onto one piece of bread on each plate, and then add the sliced cheese to the other slices of bread. Spoon half of the cooked mushrooms on to the bread with the cheese on it, and top with the other slice of bread. You can let it set for a couple of minutes to let the cheese melt.
