Ingredients

9 medium white mushrooms.
Half a small/medium onion, finely chopped.
2 cloves of garlic, minced.
1/2 a tablespoon Canola Oil.
2 tablespoons seasoned breadcrumbs.
1/5th block (one serving size) extra firm tofu, broken down with a fork.
Directions
Preheat oven to 375.
Gently wash mushrooms, remove stems.
Finaly chop stems and put aside.
Place tofu in a bowl and break it down with a fork until crumbly and add one tablespoon of the breadcrumbs.
Chop onion, mince garlic and sautee in oil until onions are translucent.
Add chopped mushroom stems to the onion mixture and cook for one minute until softened.
Remove from heat and stir in tofu/breadcrumb mixture.
Spray a baking sheet with cooking spray and lay out mushroom caps.
Fill the mushrooms with tofu mixture and sprinkle with the remaining breadcrumbs.
Bake in oven for 20 minutes, remove and cool for 1-2 minutes and serve.
Makes 9 stuffed mushrooms.
