Introduction

This recipe was inspired by someone else on Spark, but I wanted to use my own sauce instead of from a jar. Use whatever veggies you like, I just prefer broccoli and cauliflower. Ingredients

    1 bunch broccoli, cut into crowns and pieces
    1/2 head cauliflower, cut into crowns
    1 tbsp olive oil
    2 tsp minced garlic
    3 boneless skinless chicken breasts (21 oz total in my case), cubed
    2 tbsp butter (organic, unsalted for this recipe)
    2 tbsp white whole wheat flour
    3/4 cup half and half
    1/2 cup chicken broth
    freshly ground black pepper, to taste
    dash nutmeg
    1.5 cups shredded parmesan cheese, divided
    1/4 cup panko bread crumbs

Directions

Place cut vegetables in dish and add 2 tbsp water. Cover and microwave in 4 minutes increments until done to your liking (12 minutes in my case). While veggies are cooking, heat oil in large skillet over medium heat. Add garlic and saute until fragrant, about 3 minutes. Add cubed chicken and cook, stirring occasionally, until cooked through. (Mine finished around the same time as the veggies). Meanwhile, melt butter in saucepan over medium heat. Slowly stir in flour until smooth. Cook and stir until thick and bubbly, about 5 minutes. Mix creamer and chicken broth and slowly stir into butter mixture. Add a little at a time and stir until smooth before adding more. Once liquid is incorporated cook and stir until smooth and thick, about 5 minutes. Add pepper and dash nutmeg. Stir in 1.25 cups parmesan cheese, again adding in batches until each is melted before adding more. Add chicken to baking dish with broccoli and cauliflower. Pour sauce over the top and sprinkle with remaining 1/4 cup cheese and 1/4 cup panko. Broil until topping is melted and browned. My dish made 9 cups total... so 1 cup is 1 serving. (I doubled up!)
