Introduction

Ingredients

12 oz Bacon
1 large onion (chopped)
3 cups potatoes (1/2 inch dice)
2 tablespoons flour
3 large ears of corn (kernels only)
3 cups chicken broth
1 block soft silken tofu (Mori-Nu)
1/4 cup Milk, 2%
Salt and pepper to taste
Directions
Cut bacon into strips and cook until crisp in your soup pot. Remove and drain on paper towels.
Take out some of the fat, but leave about 2 tablespoons.
Add the chopped onions and potatoes and cook and stir until onions are translucent (about 5 minutes). Add flour and cook for two minutes to cook out the raw flour taste.
Add chicken broth, bring to a simmer, and cook until potatoes are just tender (about 15 minutes).
Add corn kernels and mix in.
Whiz up the milk and tofu together so it's smooth, then add to soup and turn off the burner.
Salt and pepper to taste (not in nutritional info)
Add bacon back in, and enjoy!
