Introduction

Ingredients

    .25 cup of chopped peppers of your choice
    .33 cup of chopped onions
    8 grape tomatoes sliced in half
    1 oz goat cheese
    .50 cup of baby spinach
    1/2 tsp olive oil
    2 egg whites
    2 strips of morningstar farms bacon

Directions

Brown morningstar farms bacon in seperate pan, watching closely to make sure it doesnt burn.

Brown onions, tomatoes, and peppers in olive oil until desired softness. Add egg whites and cook for 1 minute. Add goat cheese, stir to melt. Turn heat off and add spinach. Stir until just wilted.

Serve as is or on a bagel, english muffin, or tortilla. I usually serve on a multigrain tortilla. Makes 2 servings.
