Number of Servings: 16


    1 cup granulated sugar
    1 Tb canola oil
    1 individual size serving cup unsweetened applesauce
    1 tsp vanilla extract
    1 egg
    2 egg whites
    2/3 cup non-fat milk
    1 tsp baking soda
    1 cup all purpose flour
    1 1/2 cups whole wheat flour
    1/4 cup unsweetened cocoa powder
    1/2 tsp cinnamon
    1/2 tsp salt
    2 cups unpeeled zucchini, grated (about 2 medium)
    1/2 cup mini semi-sweet chocolate chips

Combine first 7 ingredients in a large bowl.
In another bowl combine all remaining ingredients EXCEPT the zucchini.
Add dry ingredients to the first bowl, alternating with the zucchini. Mix well.
Bake at 350 degrees for 1 hr in a lightly oiled bundt pan or bake 45 minutes n a 9x13 pan. Test for doneness with toothpick. Let stand 5-10 min. in pan before removing from pan. Cool completely and sprinkle with powdered sugar if desired.
