Ingredients

2 med onions, sliced
10 oz mushrooms, sliced
2 ten oz packs frozen spinach, or 5 cups loose frozen spinach
1/2 tsp adobo (or salt & pepper to taste)
2/3 cup crumbled feta
1/2 cup shredded cheddar
(really any cheese will do... this is what I had on hand)
6 eggs, beaten
1 large tomato, thinly sliced.
Directions
This makes a lot of quiche. I use an 8" round and a 9x13 so that I have breakfast for the family on one day and I can freeze the rest for my breakfast all week long.
Preheat oven to 350.
Saute the onions in olive oil until translucent, add the mushrooms and continue over medium heat. Add the spinach and continue until it is completely thawed and mixed. Add adobo, cheese, eggs and mix thoroughly.
Spray pans lightly with cooking spray and pour in egg mixture. Arrange your thinly sliced tomato on top and bake until completely set.
