Ingredients

    1 tablespoon extra virgin olive oil
    1 large onion, finely chopped
    6 cloves garlic, finely chopped
    2 cups "Baby Bella" mushrooms, sliced
    1 can (28 ounces) whole tomatoes - good quality
    16 ounces thin spaghetti or pasta of choice
    Salt for pasta water

Directions

Put a large pot of water on to boil for the pasta. Heat oil in a large skillet. Add onions and mushrooms and cook until beginning to soften. Add garlic. Cook and stir for one minute. Add tomatoes, broken up in the can with scissors (or your fingers). Simmer until onions and mushrooms are soft and sauce has reduced by half, about 20 minutes. While the sauce is simmering, add salt to taste to the boiling water, then add the pasta and cook until al dente. Serves 6 to 8 as a main course.
