Introduction

Crispy little pancakes. Would be great for use as an appetizer base. Crispy little pancakes. Would be great for use as an appetizer base.
Number of Servings: 4

Ingredients

    3 medium potatoes - grated
    1 Tbsp. egg beaters
    2 Tbsp. Parmesan Cheese
    Salt/Pepper
    Onion Powder
    Garlic Powder
    PAM Spray

Directions

Preheat oven to 375*

Place grated potato in towel and ring out until very dry. Place in bowl. Mix in remaining ingredients to taste.

Spray 2 - 8 inch cake pans with PAM (one in the pan, one on the back of the pan). Place potato mixture in pan and press down. Place other pan on top and press tight.
**Can also use muffin tins for round cakes**

Bake until crispy (about 45 minutes). Remove from pan and cut into 12 wedges.

Yields 12 wedges. Serving size - 3 wedges, serves 4.
