Ingredients

    1 cup asparagus bite size
    1 cup broccoli bite size
    1 cup spinach leaves
    2 Tbsp olive oil
    12 egg whites
    8 Tbsp grated Parmasan cheese

Directions

Sautee the vegetables until crisp/tender in the olive oil. Add the egg whites and cook until set. Place under broiler until golden brown - top with cheese or add cheese before broiling. Serves four.
