Introduction

I made the sauce from scratch but you could just buy a jar of honey garlic sauce and use as much as you want. I just used a whole bunch of vegetables that I had in the fridge that needed to get used, so your veggies can vary with this. Ingredients

    Veggies:
    1/2 large red onion, diced
    2 large carrots, chopped into thin slices
    1.5 stalks broccoli (I just kept the flowers, no actual stalk)
    1 yellow pepper
    1/2 green pepper
    1 red pepper
    2 stalks celery
    2 cloves garlic

    Sauce:
    3/4 cup brown sugar, packed
    2 tbsp cornstarch
    3/4 cup water
    3 tbsp soy sauce
    1 tbsp honey
    2 cloves garlic, chopped (or use 2 tbsp garlic powder)

Directions

1. Put brown rice on to cook about an hour before you are wanting to eat as it takes awhile to cook.
2. Chop vegetables how you like for the stir fry.
3. Spray large frying pan with cooking spray, add onion, carrots and garlic, cooking for about 5-10 minutes till carrots are semi-soft
4. Then add the rest of the veggies, cooking for another 10-20 minutes or until soft, reduce heat
5. In a saucepan, combine brown sugar and cornstarch, add water, soy sauce, honey and garlic
6. Bring sauce to a boil, then reduce to a simmer for 2 minutes.
7. Add sauce to vegetables (all or just some)
8. Serve on a bed of rice and enjoy

Makes between 4 and 6 servings depending how much you eat. Rice is not included in calorie count.

    this was really good. i just made the sauce tonight. i fixed brown rice, bought a couple packages of premade oriental veggies, and made the sauce above. the kids all love it. its sweet, and when you add a little soy in your bowl, it balances out just right. - 8/20/10
