Ingredients

    Granulated Sugar, .25 cup
    Peanut Butter, smooth style, .25 cup
    Soy Sauce, 3 tbsp
    Water, tap, 3 tbsp
    Olive Oil, 2 tbsp
    Garlic, 1 tsp
    Mori-Nu, Tofu, silken, firm, 3 slice (remove)
    Chicken Breast, no skin, 2 breast, bone and skin removed (remove)
    White Rice, long grain, 4 cup (remove)

Directions

Comine first six ingredients in a small skillet & heat until sugar dissolves. Set aside. In another skillet over medium heat, stir fry chicken pieces until cooked. Stir in tofu, onions, & green peppers until vegetables are tender. Mix in the peanut butter sauce. Serve over rice.

    Incredible!
    I left out the tofu, changed the veggies and cut the soy sauce and my entire family LOVED it!! My husband wanted me to make it again tonight (but I think I will wait until at least next week lol) - 4/16/10
