Introduction

This is an easy casserole dinner that will feed the whole family, without the use of "cream of something" soups. The main ingredients are pasta, frozen broccoli florets, canned chicken, milk & parmesan cheese. Serve with salad, or as a stand-alone meal. Ingredients

    16 oz. dried pasta (penne)
    4 cans of white meat chicken (5 oz. each)
    16 oz. frozen broccoli florets
    2 T. butter
    2 T. whole wheat flour
    2 tsp. basil
    1 tsp. lemon pepper
    2 cups milk (skim)
    1/3 cup parmesan cheese (grated)

Directions

Makes 8 servings (approimately 1 1/4 cup each)

Preheat oven to 350. Cook pasta according to package directions; drain weill; set aside.

In a large saucepan melt the butter, stir (use a wire whisk) in flour, basil and lemon pepper. Add the milk; cook and stir until thickened and bubbly, whisking often. Remove from heat and stir in chicken, broccoli, pasta and cheese. Turn mixture into 5-quart, lightly greased casserole. Baked uncovered for 10 minutes.

    Very Good
    Delicious and easy to make! I didn't have lemon pepper, so I used a garlic pepper seasoning. I also used mozzerella cheese instead of parmesan. - 7/29/10
