Introduction

Ingredients

    2 full bonelss, skinless Chicken Breasts, halved
    2 thin slices deli Ham, extra lean, (5% fat)
    4 Tbs. Low fat cream cheese, softened
    2 Tbs. Parmesan Cheese, grated
    2 oz shredded Mozzarella Cheese, part skim milk
    1 Tbsp. chopped Fresh Chives
    1/2 tsp. Garlic powder,
    1 tsp. Basil (fresh is good too)
    1/2 Cup canned Bread Crumbs - Italian Style,
    1/4 Cup Egg substitute, liquid
    1/3 Cup Buttermilk, lowfat
    dash each Salt & Pepper,
    2 sprigs fresh parsley

Directions

Mix cream cheese mozzarella and 1 Tb of the parmesan cheese together. Add chives, garlic powder, basil and one sprig of the parsley, chopped finely, to the cheese mixture. Set aside

Cut each chicken breast in half. Place each chicken breast half, between pieces of clear plastic wrap or in a quart-sized freezer bag.. Working from the center to the edges, pound lightly with the flat side of a meat mallet to 1/4-inch thick. Remove plastic wrap. Working with one breast at a time, place on a plate and spread each with about ¼ of the cheese mixture.

Cut ham slices in two. Place a slice of ham, cutting to fit, over each chicken breast within about ½ “ from the edges. Fold the edges of the chicken over the filling, and secure with toothpicks.

2. Mix remaining parmesan cheese and bread crumbs in a shallow dish. In a shallow bowl, mix the buttermilk, egg substitute, salt and pepper together. Roll each chicken breast first in milk and then into the bread crumb mixture to coat.

3. Spray a 2-quart rectangular baking dish with nonstick coating. Place chicken chicken rolls, seam side down, in prepared baking dish. Spray with a butter-style non-stick spray or a fat free spray margarine, if preferred.

4. Bake in a 400 degree F oven for 30 to 35 minutes or until lightly browned and chicken is tender and no longer pink. Makes 4 servings
