Ingredients

    Eggplant, fresh, 2 cup, cubes (remove)
    Zucchini, 2 cup, sliced (remove)
    Onions, raw, 2 small (remove)
    Cherry Tomatoes, Fresh, 1 Tomato, 8 serving (remove)
    Olive Oil, 2 tbsp (remove)
    *Del Monte Organic Diced Tomatoes, 1.5 cup (remove)

Directions

Chop vegetables into small cubes. Dice the onions. Combine vegetables-minus the canned tomatoes--and oil. Salt and pepper to taste. Grill, preferably on a grilling pan, for 10 minutes or until cooked.

Bring tomatoes and juice from can to a simmer. Add grilled vegetables.

Use as a sauce with pasta. We add grilled turkey italian sausage!
