    1 package (19oz) extra lean ground turkey breast
    6 cups cooked spaghetti squash strands
    1 cup chopped sweet onion
    1 1/2 cup chopped yellow bell pepper
    3/4 cup chopped red bell pepper
    2 cups chopped zucchini w/skin
    1 cup chopped yellow summer squash w/skin
    3 tsp minced garlic cloves
    1 tsp crushed red pepper
    2 tbs granulated sugar
    3 cups (1 can) crushed tomatoes - Italian recipe
    2 cups shredded mozzarella cheese
    1/2 cup freshly shredded Italian 3 cheese (asiago, parmesean, romano)


Pre-heat oven to 375

combine cheeses in small mixing bowl, set aside.

Lightly spray bottom of skillet with olive oil cooking spray. Crumble turkey meat - place in large skillet with chopped onion, bell peppers, zucchini and garlic. Cook over medium heat for about 15 minutes or until turkey is no longer pink. Stir in tomatoes, red pepper and sugar, simmering for another ten minutes.

Mix spaghetti squash with turkey/tomato mixture. Lightly spray 13x9 baking dish with cooking spray. Place 1/2 tomato/squash mixture on the bottom of dish. Sprinkle 1/2 cheese mix evenly on top of tomato/squash mix. Place other half of tomato/squash mix on top of cheese. Sprinkle second half of cheese mix evenly on top.

Bake for about 20-30 minutes at 375 until cheese is bubbly, just turning golden brown on top. Let set for 10 minutes before serving.
