Ingredients

    1 pound ground turkey breast, 1 medium zucchini-halved and sliced, .5 med red pepper cored and diced, .5 med green pepper cored and diced, .5 med onion chopped, 1 can kidney beans, 1 can black beans, 1 can garbanzo beans, (all beans drained) 1 can tomato sauce, 3 cloves garlic minced, 1 tsp oregano or basil, salt to taste

Directions

In large pot, brown turkey with onions and appx 1 tbs salt and drain off excess fat. Add vegetables and garlic and saute for appx 10 mins. Add beans and tomato sauce. Bring to a boil, then simmer for 15- 20 mins. Add spices and additional saltand mix well, simmer for an additional 10 mins. - freezes well, for vegetartian, take out the ground turkey
