Ingredients

2 cups sifted all-pupose flour
4 teaspoons baking powder
1/2 teaspoon cream of tartar
1/2 teaspoon salt
2 teaspoons sugar
1/2 cup butter (I use Smart Balance spread)
2/3 cup milk (I use Silk Soymilk; use just shy of 2/3 cup if using soymilk)
Directions
Sift flour, baking powder, salt, cream of tartar, and sugar into bowl. Cut in shortening/butter until the mix is like coarse crumbs. Mix well. Add milk and stir quickly just until dough follws fork around bowl. (Dough should be soft.)
To roll and cut biscuits: Turn onto lightly floured surface. Knead gently 10 to 12 strokes. Roll or pat dough 1/2 inch thick. Dip cutter in flour: cut dough straight down--no twisting. (You my get fewer biscuits with this method.)
To make drop biscuits: Just drop about 2 tablespoons of the batter onto a cookie sheet.
Bake on ungreased baking sheet in 450 oven for 10 to 12 minutes or until golden.
Makes 12-14 biscuits
