Introduction

It took me a while to perfect this Thai Cucumber Salad but I finally got it to taste just like our fave Thai places salad It took me a while to perfect this Thai Cucumber Salad but I finally got it to taste just like our fave Thai places salad
Number of Servings: 8

Ingredients

    2 large cucumbers thinly sliced with or without peel
    1 cup thinly sliced red onions
    1 cup of chopped pineapple
    1/2 red pepper finely chopped
    1 cup distilled vinegar
    1 cup water
    1/2 cup of splenda (If you use sugar then double it and add the calories)
    3 tbsp cilantro


Directions

In a sauce pan heat water, vinegar and splenda. Bring to a boil and then simmer it for for 2 minutes.

In large bowl mix sliced cucumbers, red pepper, red onion, pineapple and cilantro. Dump hot mixture on top of all veggies and marinate in fridge for atleast 15 minutes. The longer the better. To serve, spoon out with a slotted spoon.
