Fresh basil
Extra virgin olive oil
Goat cheese
Salt & pepper to taste
This recipe works best when prepared in a plastic food storage bowl w a tight-fitting lid
Directions
Slice tomatoes
Chop a small handful of basil leaves
Chop the goat cheese into small pieces (about the size of peas)
Place all the ingredients in a bowl with a tight-fitting lid. Shake vigorously until the goat cheese is dissolved into a creamy dressing over the tomatoes. Add pepper to taste, and salt only after mixing with the cheese (to avoid over-salting).
Can be served immediately but is better if it is refrigerated for 2-8 hours.
The goat cheese taste in this recipe is not too strong.
Serves 4 as a side dish
