    1 lb. chicken breasts, boneless, skinless-- pound them to a uniform 1/2" thickness between waxed paper

    1/4 c. bread crumbs
    1/4 c. whole wheat pastry flour
    1/2 tsp. paprika

    3 TB dijon mustard
    1 TB honey
    1 TB water
    salt & pepper to taste

    1 TB butter


Preheat oven to 425.

In one shallow bowl mix bread crumbs, flour & paprika.

In another shallow bowl mix dijon, honey, water, salt and pepper.

Take each piece of chicken and dip into the dijon mix, then dredge in the flour mix. Place on cooking spray-coated pan. Drizzle melted butter over the top.

Bake for approximately 12-15 min, or until cooked through.
