Ingredients

2 oz dry Smart Taste Thin Spaghetti, cooked to desired tenderness
1/2 medium white onion, chopped
2 roma tomatoes, chopped
3 cloves garlic, minced
2 cups, packed fresh spinach
8 large black olives, chopped
1/4 cup grated parmasan cheese
2 large eggs, poached
1 Tbsp canola oil
Directions
Combine oil, garlic, tomatoes, onions and black olives in pan and saute until onions are tender. Add spinach and continue saute'ing until spinach turns dark green. Add parmesan cheese and stir through. Plate spaghetti in serving bowl. Top with tomato "sauce" and poached eggs. Stir together until creamy. Divide. Makes 2 dinner servings or 4 side servings
