Introduction

As a believer in the concept of keeping favorite foods a part of our new lifestyle, I developed this recipe that is usually fried into a healthier version by using whole wheat flour, egg whites instead of whole eggs and then baking them until they were deliciously crisp and tasty! Ingredients

    40 oz. pork chops, lean
    1 C whole wheat flour
12 club or butter crackers, crumbled
    1 t salt
    1 t pepper
    1 t garlic powder
    1 t onion powder
    2 egg whites
    1/2 C milk
    2 T olive oil

Directions

In 9x13 pan or roasting pan, pour 2 T olive oil and spread evenly with a basting brush.

Combine flour, cracker crumbs, salt, pepper and garlic in shallow dish (I use a pie pan). In another shallow dish, whisk together 3 egg whites and the milk.

Dip each pork chop into the egg wash mixture and then dredge in the flour mixture. Place in roasting pan.

Roast in oven at 350 degrees for 45-60 minutes depending on the thickness of your pork chops.

Makes 10, 4 oz servings.
