Introduction

Number of Servings: 4

Ingredients

    2 Tbs Extra Vigin Olive oil
    3 cloves Garlic, Minced
    1 Shallot, sliced thin
    Salt and Pepper to taste
    1 oz Dry Vermouth
    1 14.5 oz Can Fire Roasted Tomatoes
    8 oz of spaghetti
    100 Grams of Chopped Portabella mushrooms
    1.5 tsp basil
    1 tsp Oregano
    I package of Bay Scallops, 340 gms
    1/4 tsp Cayanne pepper, spicier add 1/4 more
    1 tsp lemon peel zested

Directions

Serves 4

Cook pasta according to package directions, using 1 tbs of EVO.

Heat remaining olive oil to medium high in skillet. Add garlic and cayanne pepper and cook for 5 - 6 mins. Add shallots and mushrooms then cook for 2 minutes more. Add tomatoes, basil and oregano and reduce heat to simmer for 20 mins.
Add lemon zest and wine and cook for an additional minute. Turn up heat to medium and add scallop and cook until opaque,, about 5 mins. Remove from heat immeadiately. Divide pasta into 4 servings and top with scallops and sauce evenly.

    Made this recipe as listed & it was yummy! Affordable, easy to make & a perfect dinner (& lunch left-overs) for the empty nesters. Will definitely be saving this to my Favorites & making it again. (Has become one of my favs; thanks so much SIRCHRISRR!) - 10/15/11
