Introduction

Ingredients

    1 pound chicken
    1 bay leaf
    3 cups cooked brown rice (short grain)
    1 cup diced celery
    1 cup sliced zucchini
    (any other veggies would be a good idea, I lacked a good amount of vegetables)
    3 cloves of garlic mined
    1/2 medium white or vidalia onion, minced
    1 big can of contadina crushed tomatoes with Italian herbs
    6 cups of chicken broth
    pepper, to taste (i used 5 tsp)
    fresh or dried parsley, to taste

Directions

makes about 8 1-cup servings.


Add chicken broth, tomatoes, and chicken to the slow cooker. Place on low for four hours.

Prepare onion, garlic, celery, zucchini or other vegetables, and add to the pot. Keep on low for two more hours or until chicken is throughly cooked.

Take cooked chicken out of pot and dice or pull apart, whichever you prefer. Add chicken back into the pot. Stir in cooked rice. Keep on low for an hour. Open pot and enjoy with a couple low sodium saltines or whole wheat bread :)
