You know how it is when you go into a kitchen and smell a grilled cheese sandwich? Try this instead and get a whopping delicious service of vegetables instead of cheese.

Ingredients

    1 cup steamed cauliflower
    1-2 tbsp mayonnaise
    1/4 tsp Dijon mustard (optional)
    1/4 tsp salt or Spike
    1 tsp chopped celery or water chestnuts (optional)
    2 slices whole grain bread
    1 tbsp butter
    1/2 cup alfalfa sprouts or lettuce
    1 tbsp carrots, shredded

Directions

Heat pan or electric grilled sandwich maker. Mash cauliflower with mayonnaise, mustard and salt. Add celery, mix. Butter bread. Place 1 slice buttered side down on pan or sandwich press. Spread cauliflower mixture on unbuttered side of bread. Sprinkle with sprouts or lettuce and carrots. Place other piece of buttered bread clean side down and grill or press for about 3 minutes until golden and toasted, filling warm. Serves 1.
