Ingredients

    3/4 cup wheat bran
    3/4 cup wheat germ
    1 cup lowfat buttermilk
    3/4 cup white all purpose flour
    1/4 cup whole wheat flour
    1/4 cup packed brown sugar
    1/4 cup white sugar
    1 tsp baking soda
    1 tsp ground cinnamon
    1/4 tsp ground nutmeg
    1 large egg
    1 egg white
    1/2 apple, peeled and chopped

Directions

Combine wheat bran, wheat germ and buttermilk in small bowl. Let sit 10 minutes.
Beat egg and egg white with fork. Add to milk mixture. Add apple to milk mixture.
Preheat oven to 400 degrees.
Line muffin pan with paper liners or spray with cooking spray.
In a large bowl combine the remaining dry ingredients.
Add the milk mixture to the dry ingredients and mix just until combined.
Do not overmix or the muffins will turn out tough.
Bake in preheated oven 13-15 minutes or until a wooden skewer inserted into the center comes out clean. Allow to cool for 5 minutes before removing from pan.
Can be frozen in a zip top storage bag for a quick breakfast or a mid-day snack.

    I substituted apple cider for the sugar & buttermilk. Not sweet enough. Might try prune juice and/ or half the sugar. I added walnuts to the second half batch. Will not waste - might make some triffle. Pudding and whipped cream can fix anything! ;-D Black Forest should do! :-D - 2/20/11

    I liked the muffins but mine were a little bland. It may have been my fault because I think I forgot to add cinnamon. OOPS! Anyways, I still like them. They had a good texture and everything. I'll probably make them again but add the cinnamon. - 5/20/10

    Simply the best bran muffins I have ever had ... was not big on bran muffins until I found this recipe, now this will be part of my sunday prep for the week !! I used (baking & brown sugar blend) in lieu of real sugar and used all whole wheat flour for the added benefit and they turned out perfect ! - 4/8/10
