Introduction
It's a slightly different take on Chicken Parmesan - the chicken is not breaded, but coated with garlic, basil, and parmesan and baked with tomato sauce. Serve over Angel Hair pasta. Ingredients

3 skinless boneless chicken breasts
6 cloves garlic, pressed
2 tbsp dried basil
2 tbsp grated parmesan
1 cup sliced fresh mushrooms
1 1/2 cups marinara sauce
1/2 cup shredded mozzarella
Directions
**Note: My cooking times are very approximate, I usually just judge by how it smells and looks. :) **
Spray a baking dish with cooking spray (like Pam). Dish should be just big enough to hold 3 chicken breasts side by side snugly. Place chicken breasts in the dish, sprinkle with basil, garlic, and parmesan. Throw some cracked pepper on there too! Cover and bake at 400 degrees about 15-20 minutes.
Add mushrooms and marinara sauce, cover again and bake another 10 minutes. About 5 minutes before you are ready to serve, remove the cover and sprinkle the mozzarella cheese on there. Finish baking until the mozarella is melted and bubbly.
Makes 3 servings. Serve with pasta and a green salad for a delicious high-protein/low-calorie meal!
