Introduction

This is a traditional Pico de Gallo recipe that is incredibly fresh and simple to make. I recommend that the seeds and juice be removed from the tomatoes (I prefer very ripe cherry or Roma varieties) prior to processing, as your results may be excessively watery if you skip this step. Secondly, I like to use pickled jalapeņo peppers to bring out more of their flavor. And lastly, my secret technique: I like to include the actual pulp of the limes in the recipe as well - it gives the salsa a little extra zing! Ingredients

    1 very large white onion
    4 large ripe Roma tomatoes (or 4-5 cups cherry tomatoes)
    Approx. 4 tbs (packed) cilantro
    1/3 cup pickled jalapeņo peppers, sliced
    1-2 cloves garlic
    1/4 cup freshly squeezed lime juice (use the real thing - it truly makes a difference!)
    Pulp from squeezed limes
    1 1/2 tsp salt
    1 1/2 tsp sugar

Directions

Combine all ingredients in a food processor and pulse until desired texture is reached (I like mine a little more on the chunky side) :)
