Ingredients

1 onion
75 gr mushrooms
1 pepper
1 tbsp olive oil
4 fresh eggs
100 ml milk
margarine for greasing
Directions
1. Cut the onion, mushrooms and pepper finely. (You could also use other vegetables as potatoes, peas, sweetcorn etc).
2. Fry the vegetables in 1 tbsp of olive oil for a few minutes, until they begin to brown.
3. Spoon the vegetables into the bottom of a dish after being greased with margarine/olive oil.
4. Break and beat the eggs in a sepatare bowl, then add the milk, together with salt, pepper, paprika and other spices.
5. Pour the eggs over the vegetables in the dish and bake for 30-40 minutes until it is finished.
