I don't know where I got this recipe, but it is absolutely delicious! My husband had seconds and thirds and he doesn't usually do that. I don't know where I got this recipe, but it is absolutely delicious! My husband had seconds and thirds and he doesn't usually do that.

Ingredients

    1 1/2 lb new potatoes, halved
    2 tsp olive oil
    kosher salt and fresh ground pepper to taste
    2 tsp red wine vinegar
    1 clove garlic, minced

Directions

Preheat the oven to 350 F.
In a large bowl, toss the potatoes with the olive oil and a generous sprinkling of salt and pepper.

Spread potatoes onto baking sheet. Roast, tossing occasionally until almost tender, approx 20 min. Increase heat to 500 F toss the potatoes again, and roast until they have a brown crust, 10-15 min.

Put potatoes in large bowl and toss with fresh garlic and red wine vinegar. Add more salt and pepper to taste.
