Ingredients

    This is a good high fiber meal that will fill you up and it is a good side dish as well.

    1 onion, chopped
    1 green pepper, chopped
    1 can kidney beans, rinsed
    1 can pinto beans, rinsed
    6 oz. V8 juice
    1 tsp chili powder
    1 tsp cumin

    1 cup cornmeal
    1 cup flour
    1/4 cup oil
    2 eggs, beaten
    1 cup milk
    1 tsp. baking powder
    2-4 tsp sugar
    1/2 tsp salt
    1/2 cup cheese, shredded

Directions

Put the first seven ingredients in a skillet and let the vegetables get soft. Let simmer. While simmering mix the rest of the ingredients in a bowl to make a corn bread mix. Put the simmering mix in a greased 2 quart dish and top with the cormbread mix. Bake in 400 degree oven for 25-35 minutes until cornbread is cooked through.

    Incredible!
    Excellent! An absolutely delicious meal. I could only make it serve 6 as a main dish though. I think this will be a regular on our menu. - 5/25/09
