Ingredients

    9 oz. package of fresh cheese tortellini
    2 cups halved cherry tomatoes
    2 cups fresh spinach leaves, coarsly chopped
    1/2 cup chopped pepperoncini peppers
    6 TB preshredded parmesan cheese
    1/4 cup capers
    1/4 cup fresh basil
    1 (16 oz.) can of navy beans
    2 Tb lemon juice
    1.5 Tb. extra virgin olive oil.

Directions

While pasta cooks according to the package directions, combine all but the lemon juice and oil in a large bowl.
Drain the cooked pasta and rinse with cold water.
Add pasta, juice and oil to tomato mixture and toss.
Serve immediately.
