Introduction

My daughter gave me this idea. Salt lover's may want to salt this dish but those on lower sodium. Personally I'll be adding some cayenne pepper next time. Large portion size at 6 servings. Tasty! Ingredients

    2.75 pounds boneless/skinless chicken breasts (6 breasts)
    6, 1oz slices of 2% Swiss cheese
    12 slices of Healthy Ones Honey Ham (about 16g each)
    18 grams French's spicy brown mustard
    24 grams Panko bread crumbs
    12 grams Fiber One cereal, crushed
    .25 tsp black pepper
    .5 tsp Mrs Dash Garlic & Herb seasoning
    Pam Olive Oil Spray (probably 8 seconds worth)

Directions

Makes 8 servings.

Preheat oven to 500 degrees. Place rack in a sheet cake pan. Lightly spray with Pam olive oil spray.

Crush Fiber One cereal (I use a coffee grinder) and add to Panko, black pepper, and Mrs. Dash. Mix well and put on a plate. Place mustard in a bowl with a basting brush.

Remove visible fat from chicken breast and place on cutting board. Cut a pocket in each breast. Pat dry. Take one slice of cheese and fold into 3. Roll 1 to 2 slices of ham around cheese and stuff into breast. If necessary, tie with twine. Baste each breast with the mustard. Press breast in Panko mixture and place on sheet pan with rack. Repeat with remaining breasts. Spray each breast lightly with Pam.

Place pan in oven, reduce heat to 375 and bake for 25 to 30 minutes until cooked through.

I found the serving size too large, so I cut mine in half. Hubby ate 2 in one sitting.
