Ingredients

    2 Artichokes
    10 cloves of garlic
    2 tbsp olive oil
    1 lemon

Directions

Cut off the top 1/3 of the artichoke. Tuck in 5 peeled whole cloves of garlic into each artichoke (you can use less garlic, but the garlic roasts and become sweet and paste-like it is very tasty spread on bread). Squeeze half of a lemon's juice onto each artichoke, drizzle with olive oil, and sprinkle with salt and pepper.

Wrap each artichoke in aluminum foil and roast in a preheated oven at 425 for about 1 hour and 15 minutes.

    Very Good
    I made this with 2 artichokes and steamed two others to compare the taste. Not only did I really enjoy the roasted artichokes (better), but the roasted garlic was an additional treat.
    The time it takes would make me more inclined to roast a bunch at a time, then store. Clean up was more too.

    Incredible!
    Delicious! A friend gave me 2 artichokes, and I had no idea how to cook them - then I found this recipe. I used less oil, but it still worked out fine. Next time, I'll cut the artichokes in half lengthwise, so I can spray the oil more evenly inside - then, re-assemble before wrapping and roasing. - 7/17/10
