Introduction
I made a twist on the full fat version of this pasta salad Im used to making. I used light miracle whip and non fat greek yogurt and light balsamic vinaigrette to give it great flavor with a lighter taste. I don't miss the old one, one bit! Ingredients
-
-4oz (dry) Barilla Whole Grain Penne
-12oz cooked boneless skinless chicken breast
-1/2cup (8tbsp) Kraft Miracle Whip Lite
-2/3 cup or 4oz Fage Total Fat Free Greek Yogurt
-1/4 cup (4tbsp) Kens Lite Steak House Balsamic Vinaigrette Dressing
-1/2cup peeled chopped cucumber
-1/2 a med. green bell pepper chopped
-1/4 a med. vidalia (or any onion on hand) chopped
-1/2 cup tomato
pepper to taste (and or salt but becareful with the sodium!)
Directions
Cook the pasta and Chicken until done, Chill chicken and pasta
Chop the veggies
In a bowl, combine yogurt, dressing, and miracle whip lite.
When the chicken and pasta are chilled, add all ingredients in a bowl and mix until well blended. Chill for 30 mins before serving.
Makes 4 approx 1 1/2 cup servings.
Note: Grape or Plum tomatoes cut in half and black olives are also great in this!
