Introduction

Ingredients

    26g Anchovies
    20g olive oil (preferably from anchovies)
    2 cloves of garlic (chopped)
    400g of chopped tomatoes
    1 large pinch of mixed or Italian herbs
    100g sliced black olives
    50g capers

Directions

makes 4 servings

Heat a frying pan and add the anchovies and oil (A single 2oz can undrained is fine)

Cook and stir breaking up the anchovy fillets, until it becomes a paste.

Chop and add the garlic and allow to cook for 2 minutes.

Then add 1 can of chopped tomatoes and some mixed herbs. Give the sauce a stir and leave on a low heat for 5 minutes.

Add sliced black olives and the capers. Leave on a low heat for 2-3 minutes, stirring as needed.

Serve mixed through Spaghetti.

    this is almost identical to my recipe - what I love most about it - it's a pantry dinner - every ingredient comes right out of the pantry - so you never have a reason not to have a fanstastic dinner in minutes.. It's one of my go-to dinners... - 1/18/09
