Introduction

This is a delicious alternative to fried chicken for those who like a crunch! This is a delicious alternative to fried chicken for those who like a crunch!
Number of Servings: 3

Ingredients

    1 package of Purdue Fit and Easy boneless skinless chicken breasts (3 breasts)

    1 package of Hidden Valley Ranch Salad Dressing & Seasoning Mix (dry mix) 2oz. package or 56g

    1 cup of Kellogg's Special K cereal (plain, original)

    2tbs of a light margarine

    1tbs of jarred minced garlic

Directions

This recipe makes enough for 3 servings (1 breast per serving)

First pre-heat oven to 350 and set aside a glass baking dish

Start off by rinsing the chicken breasts in cool water and place on a paper towel to remove excess moisture and set aside.

Next, place 2tbs. of margarine and 1tbs of minced garlic in a glass or ceramic microwaveable bowl and heat in microwave for about 20sec. (or until butter is just melted). Stir mixture with a spoon and set aside.

In a separate glass bowl, place 1c of Special K cereal, and use a 1c plastic measuring cup to crush the flakes-be sure not to crush too much or the chicken will not be as crispy.

Then place the dry Ranch seasoning into the crushed cereal and stir together well with a spoon.

Take1 breast at a time and place chicken into bowl with margarine/garlic mixture until well coated.

Then place the chicken into the cereal/ranch mixture until well coated and then place into the baking dish.

Sprinkle any cereal mixture remains over the chicken in the baking dish.

Bake in oven for 35min-making sure that chicken is no longer pink.
