Ingredients

    7 cups diced red potatoes
    1/2 onion
    3 tbsp chopped fresh rosemary
    8 cloves garlic
    3 tbsp extra virgin olive oil
    salt and pepper to taste

Directions

preheat oven to 400 degrees
combine all ingredients in large mixing bowl
spread out on cookie sheet
bake at 400 degrees for 20 minutes or until golden brown

Makes 10 - 3/4 cup servings

    I make a similar recipe except I use spray olive oil reducing the calories further. I spray the cookie sheet add the spices including paprika and spray the potatoes with olive oil spray. - 3/27/11

    I didn't add quite as much garlic as the recipe called for, but after tasting I think 8 cloves would be just right. I really liked the taste of the dish and it is so easy to make. I did reheat leftovers the next day and they seemed to be too dry, so I'd recommend eating them all the first day. - 10/27/10

    These are great and very easy. Wasn't sure if onion was to be chopped or sliced? And if garlic was whole cloves or minced? I minced the garlic and chopped the onion fine. - 3/29/10
