Persian Rice Persian Rice

Ingredients

    2 tsp. tumeric
    1 large potato
    2.5 cups long grain white rice
    4 tbsp. olive oil

Directions

Soak rice for 2 to 3 hours.

Parboil for 6 to 8 minutes in soaking water.

Rinse in cold water.

Heat 3 tbsp. olive oil in bottom of non-stick pot and add tumeric. When hot layer pot with potato. Pile parboiled rice in pot in a mound. Make a hole in the middle of the rice with a wooden spoon. Cover with a towel and lid and let cook on high for 5 to 8 minutes. Turn to low and let cook another 12 to 15 minutes for a total of 20 minutes.
