Introduction
I made this up .. I think ... or I was inspired and had to 'tweak' it a bit based on what was available. Remember, I don't know how to cook so if you don't ... you'll like this one. I made this up .. No photo... I ate it too quickly - but I'll make it again.
I used a large flour tortilla,
Then I spooned on about a 1/4 cup of tomato pesto mixed with a bit of shredded cheeses on hand. I sliced up one large sprig of asparagus julienne style, did the same thing to a 2 inch piece on onion (only 2 layers worth) and from a can of artichoke hearts sliced up 3 small pieces into smaller pieces. I put a bit more cheese on it and then added the veggies to the top. I sprinkled a bunch of oregano on top (and some Mediterranian mixture I had - bay leaves onion salt inside, I think, I'm not sure) ... basically just Italian type spices and plunked the whole thing down into the ove which I had prepped to 475 degrees about 5 min. prior to baking it. I did build the pizza on my flat round sheet and sprayed it first with some canola oil (I did spray a bit on the tortilla before I started making it but I could have done without it).
Directions
See ingredients list. It makes 2 servings. I cut it into 4 pieces, ate all 4 and now have a belly ache ... but it was worth trying the experiment. Next time, I eat just half and have a salad on the side.
