Ingredients

    1 c diced mango (1 mango)
    1 1/4 c diced plum tomato (about 3)
    1/4 c vidalia or red onion
    1/2 c diced cucumber
    1/2 c chopped carrot
    1 minced garlic clove
    large handful cilantro, chopped
    1 T apple cider vinegar
    2 T fresh lime juice
    1 t sugar
    1 t olive oil

Directions

Chop and stir all ingredients. Refrigerate.
