Simple ingredients, simple instructions, and delicious and friendly for those following a low carb diet. Looking at the ingredients, you can tell this *wont* be super sweet, but it is great with a scoop of slow churned vanilla ice cream, or greek yogurt! Ingredients

    1 cup canned PURE pumpkin (not pumpkin pie mix)
    1 cup egg beaters
    1.5 cups wheat bran
    1 tsp baking soda
    1 tsp baking powder
    1 tsp pumpkin pie spice (or cinnamon)
    1 tsp stevia

Directions

Preheat oven to 350°. Mix all ingredients together. Pour into a regular sized 9x5 loaf pan sprayed with non-stick spray. (I use the silicone bakeware - works amazingly!) Place pan in oven and check after 30 minutes. Making this in various ovens (conventional oven, toaster oven, etc.) I've needed anywhere between 30 and 40 minutes, but you get to be the judge. I prefer my bread to be on the moist side.

The WHOLE loaf has only 400 calories, so you can also be the judge on how many you want to serve. That is, *if* you want to share
