Introduction

Number of Servings: 20

Ingredients

    3 lbs. ground turkey, 93% lean
    3 lbs. smoked turkey sausage (family pack)
    2 cups rice
    2 eggs
    1 can of sauerkraut
    3 heads of cabbage
    1 32 ounce can of tomato sauce
    1 32 ounce can of tomato juice
    salt, pepper, & thyme (I use about 2 tbs salt and 1 tbs pepper /thyme but this could be adjusted to your preference)

Directions


Saute onion in 2 tbs. olive oil
In large pot of water, cook cabbage until leaves are soft and then partially cut vein off to allow for easier rolling.

In large bowl add:

gr. turkey
1/2 can of sauerkraut
eggs
onion
rice (have cooked it partially and used uncooked rice, both work well)
1/2 cup of tom. juice
salt, pepper, and thyme

Use about 1 heaping tablespoon of meat mix per roll (depending on size of leaf may want to use more). Top layers with turkey smoked sausage, tomato juice, and tomato sauce.

Cover and let cook for 3 hours at 350 degrees.

Makes about 40 cabbage rolls per large roaster pan. 20 2 piece servings. Since there is quite a bit of prep time, it's best to make it in big batches since they freeze well. The longer they cook, the better they are.
