Introduction

This is a healthy, refreshing way to eat fruit on a hot day. The whole blueberries gives the popsicles that extra something and they look beautiful floating in the red watermelon. Ingredients

    3 cups diced Watermelon, seeds removed
    Juice of one Lime (fresh is important here)
    1/4 tsp. Stevia Powder
    1 cup unsweetened frozen Blueberries (fresh may be substituted)
    Popsicle mold(s)

Directions

Please note that prep time does not include freezing time.

Makes 12 __ounce popsicles.

Place 3 cups of diced watermelon on a baking sheet and place in the freezer for at least 2 hours. You can freeze it in a freezer bag instead, just be sure to freeze in a flat layer. In a small cup mix the lime juice and the stevia powder until the stevia is dissolved. Place watermelon in a blender, add juice mixture and blend on a higher speed until smooth (my blender has "blend" and "ice crush" settings). You may need to stop the blender and stir the mixture to get it blended evenly. If the consistancy is too thick you can add up to 1/2 cup water (or fruit juice) to the blender.

Place 2-3 blueberries in the bottom of each popsicle mold. Add the rest of the blueberries to your blender and mix BY HAND with a spoon or rubber spatula. Immediately pour into popsicle molds and freeze until firm, about 2 hours (if the kids keep the freezer door closed). Enjoy!
