Introduction

Ingredients

    16 oz elbow macaroni
    1 cup diced ham, lean only
    1 cup diced turkey, white meat
    15 slices pepperoni, snipped into fourths
    1 cup diced or cubed cheddar cheese
    1/2 cup chopped green pepper
    1/2 cup chopped red bell pepper
    1/2 chopped celery
    1/2 cup chopped carrots
    1/2 cup diced red onions
    1/2 cup chopped fresh broccoli
    1/2 cup chopped summer squash
    1 16 oz bottle diet or fat free italian salad dressing
    1 teasp salt
    1/2 teasp pepper
    1/2 teasp ground oregano

Directions

Cook elbow macaroni according to package directions. Drain, and cool. While cooking, chop and assemble meats, cheese, and vegetables. In large bowl, add all ingredients except italian salad dressing. Mix together. Add italian dressing until all ingredients are lightly coated, you may not wish to use the entire bottle of dressing. Chill well. Serves 16 as side salad. You can use 1/2 cheddar cheese, 1/2 of any other kind of hard cheese for variety. The ham can be purchased already diced in most grocery stores. Buy the turkey in one slice at deli, then dice. You can vary the veggies, add green onions, zucchini, radishes, yellow or orange bell peppers, etc. Instead of italian dressing, you can use a fat free creamy ranch dressing, for a different taste.
