Introduction

These cookies are quite good.They should be light golde brown when done.The brown sugar sort of carmelizes the rice krispies making you think you're eating toffee chips.It makes a very large batch,ir you make them at 1 oz. or 1 tbs. per cookie.the dough is quite soft at first,so you'll want to refrigerate it for a couple of hrs. before using it.They have only 9.3 carbs per cookie at this size. Ingredients

    1 Cup granulated sugar
    1 Cup Brown sugar
    1 Cup butter
    1 Cup Veg. oil
    1 egg
    pinch of salt
    1 Cup oats(not steel cut)
    3 1/2 Cups flour
    2 Cups rice krispies
    1 Tsp. cream of tartar
    1 Tsp. baking soda
    1 Tsp. vanilla

Directions

Cream together butter and sugars.Add oil and egg.Then mix in salt,soda,vanilla and cream of tartar.Add flour,then oats.I do all of this with my Kitchen Aid mixer with the paddle attatchment.Lastly mix in cereal,gently.Refrigerate at least 3 hrs.Roll into 1 in. balls and press down with a fork(like peanut butter cookies).Bake at 350 degrees for 10-13 min.,depending on your oven and how brown and crispy you like them.Makes approximately 100 cookies.They freeze really well.This is an excellent cookie,and now that I know how low the carbs are,I'm very happy!!
